Patio party


This summer is the year of the patio party. On this patio, there’s a lot of sipping, grilling, and chilling.   A fan fare favorite is old bay steamed shrimp.  I hit the easy button and bought the cheesecake.  The multiple flavors were a huge hit.  Someone pictured above ate 3 pieces. In his defense they were small slivers.

This time I made ham and cheese sliders heated in the oven coated with oil and Italian seasoning, mambo shredded chicken and my latest creation smokey latino shredded chicken.  This mouthful of flavor is created by using Mama Sita Adobo Marinade soak for 30 minutes and then create enchilada sauce:

Ingredients
  1. 2 tablespoons avocado oil or olive oil
  2. 2 tablespoons all-purpose flour*
  3. 1/4 cup chili powder*
  4. 1/2 teaspoon garlic powder
  5. 1/2 teaspoon ground cumin
  6. 1/4 teaspoon dried oregano
  7. 2 cups chicken or vegetable stock
  8. fine sea salt, to taste

I put this into a crockpot with fully cooked shredded chicken for a couple of hours.  Served with Hawaiian rolls and an assortment of cheeses.   The evening ended with a jello shooter salute.  “Friendship is the hardest thing in the world to explain.
