We decided to expand our palate and did a BBQ tasting. We sampled 4 common well known states for their sauce. We each got to rate our favorites. Mine was Carolina followed by a close second Texas.
First up Missouri
I think this is what I think of when it comes to BBQ sauce. Kansas City is sweet and tangy with a base of tomato or ketchup base and includes brown sugar or molasses. Ketchup and molasses delivers a sweeter, ticker taste versus a smokey flavor.
2nd is Texas
The big state offers a sweet and spicy sauce. The spicy red pepper and molasses combined with apple cider vinegar delivers a bold strong finish.
3rd is North Carolina
Eastern NC uses a thin sauce made of vinegar and spices usually cayenne pepper. I call this white BBQ and am a fan of the thick and tangy with a subtle sweetness.
4th up is Tennessee
Memphis is made with tomatoes, vinegar, and a handful of spices. I find it thin, tangy and sweet. This is dipping sauce vs what I use to slather.
